Dashi is one of the cornerstones of Japanese cooking. Made from kombu seaweed and katsuobushi - dried bonito fish flakes - this stock imparts a savoury depth of flavour that is quintessentially Japanese. Dashi is essential for many Japanese dishes, particularly Japanese soups and rice dishes.
Whereas home cooks in the UK often rely solely on substitutions such as dried bonito powder, you can't beat real dashi stock from Japan. That's why we import a variety of restaurant-quality dashis in concentrated liquid form, requiring only hot water to dilute.
