Ponzu is a citrus sauce commonly used in Japanese cuisine. Tart, thin and dark brown, it delivers a distinctive umami flavour. Ponzu sauce is made by simmering mirin, rice vinegar, katsuobushi flakes (bonito fish) and seaweed. After letting it cool completely and straining it, citrus juice is added for tartness.
Whereas a homemade ponzu sauce recipe may call for lemon juice, lime juice, orange juice or lemon zest, authentic ponzu is soured with aromatic Japanese citrus fruits: fresh yuzu, daidai, yuko, kabosu or sudachi. Our Japanese ponzus are made with natural ingredients like shiitake mushroom, bonito stock, kombu, honjozo shoyu (soy sauce) and hon mirin (Japanese sweet cooking sake) for a complex umami flavour balanced with the distinctive citrus zing.
