Discover the powerful umami flavour in this premium dashi, made by Hokkaido Kensho. This high-quality liquid dashi (stock) is made from the rare and nutrient-rich ne kombu, the prized root section of Hidaka kombu seaweed, sourced from the pristine waters of Hokkaido. The root of the kombu contains the highest concentration of minerals and umami, resulting in a naturally rich and deeply savoury broth.

Using a meticulous three-day simmering process, crafted to extract every drop of umami while preserving the natural integrity of the ingredients, this thick unctuous dashi delivers a rich and complex depth of flavour, only a small amount is needed to enhance a wide variety of Japanese and western dishes.

Basic Dilution Guide:

  • Light Broth (for clear soups, miso soup or simmered dishes): Mix 1 tbsp dashi concentrate with 600ml water.
  • Richer Flavour (for stews, hot pots or ramen bases): Mix 2 tbsp dashi concentrate with 600ml water.
  • Seasoning Boost (for rice, stir-fries or sauces): Add a few drops directly to taste.

How to use:

This concentrated dashi is incredibly versatile and can be used in multiple ways:

  • Miso Soup: Add 1 tablespoon to 600ml of water, bring to a gentle simmer, then stir in miso paste, tofu and wakame for a traditional Japanese appetiser.
  • Seasoning for Rice & Noodles: Mix a few drops into a bowl of hot rice, or stir into udon or ramen broth, for an instant flavour boost.
  • Stir-Fries: Use a few drops as a seasoning for stir-fried vegetables or tofu to create an umami-packed side dish.
  • Nabe/Hotpot: Add 2 tbsp with 600ml water to make the broth for a delicious and nutritious pork and cabbage mille feuille nabe hotpot – see recipe

Store in a cool, dark place and refrigerate once opened.
