A deliciously light and refreshing dish, perfect for summer and to showcase the unique flavour of myoga ginger.
Ingredients:
- 200g soba noodles
- 3 myoga ginger buds, thinly sliced
- 2 green onions, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon sake
- 1 teaspoon sugar
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
Instructions:
- Cook the soba noodles according to package instructions, then drain and rinse under cold water.
- In a small bowl, mix the soy sauce, mirin, sake, sugar, sesame oil, and grated ginger.
- In a large bowl, combine the soba noodles, myoga ginger, and green onions.
- Pour the sauce over the noodles and toss to combine.
- Serve chilled or at room temperature.
