We wanted a sushi rice vinegar that wasn't overly sweet, most have a lot of sugar or fructose syrup, which can be over powering but this Kumano No Su pure rice vinegar is sweetened using mirin (Japanese rice wine) giving a natural, subtle sweetness whilst enhancing natural flavours.
