What is Tamagoyaki?

Tamagoyaki is a quintessential element of a traditional Japanese breakfast, often found in bento boxes and served as a delightful side dish. This rolled omelette is made from a simple yet flavourful blend of eggs, soy sauce, mirin and a pinch of salt.

The magic of tamagoyaki lies in its delicate layers, which are achieved by cooking the egg mixture in a special rectangular pan called a Tamagoyaki pan or Makiyakinabe. The process requires patience and precision, as each layer is carefully rolled to create a beautifully cooked, slightly sweet omelette. Mastering tamagoyaki is a rewarding experience that brings a touch of Japanese culinary artistry to your breakfast table.

A traditional Japanese breakfast is a harmonious blend of flavours and textures, designed to provide a balanced and satisfying start to the day. Tamagoyaki is one of the key components of this breakfast which is also often accompanied by a steaming bowl of hot rice, a comforting bowl of miso soup and an array of side dishes such as grilled fish and pickled vegetables. The kit also features essential seasonings and condiments like soy sauce, mirin and wasabi, ensuring that every dish is infused with authentic Japanese flavours.

Tamagoyaki Japanese Rolled Omelette Recipe

Tamagoyaki is a sweetened Japanese omelette with a slightly sweet taste and custardy texture, that is shaped into a bar and cut into slices to serve.  In Japanese, "Tamago" means egg and the word "yaki" means to be cooked over direct heat.

This delicious breakfast, lunch or side dish has been a favourite since becoming popular in Japan in the 1950s, when people looked to incorporate more protein in their diet.  See for yourself why it is still popular today by trying it out!

Ingredients:

Method:

  1. In a bowl, beat the eggs until well combined.
  2. Add soy sauce, mirin, and sugar to the beaten eggs. Mix until the sugar is dissolved.
  3. If using any fillings, prepare them before hand and set them aside.
  4. Heat a tamagoyaki pan or a small non-stick frying pan over medium heat. Brush the pan lightly with vegetable oil.
  5. Pour a thin layer of the egg mixture into the pan, just enough to cover the bottom.
  6. Once the bottom layer starts to set but is still slightly runny on top, gently roll it from one side of the pan to the other using chopsticks or a spatula.
  7. Push the rolled omelette to one side of the pan, and oil the exposed area of the pan with a paper towel or brush.
  8. Pour another thin layer of the egg mixture into the pan, making sure it flows underneath and around the rolled omelette.
  9. Once the new layer starts to set but is still slightly runny on top, roll it up again to incorporate it into the existing roll.
  10. Repeat steps 7-9 until all the egg mixture is used, rolling the omelette back and forth to create layers.
  11. Once the omelette is fully cooked and has a nice golden colour, remove it from the pan and let it cool slightly.
  12. Use a sharp knife to slice the rolled omelette into bite-sized pieces.
  13. Serve the tamagoyaki slices warm or at room temperature and garnish with the chopped spring onions.
