A unique dressing that highlights the delicate flavour of Ouma bamboo shoots, grown in mineral-rich red soil and pure spring water of northern Kyushu, the shoots are harvested in early spring. Unlike other bamboo shoots, these young shoots are so mild and tender that they can be eaten raw, they are often served like sashimi.

To preserve their natural sweetness and crisp texture, the bamboo shoots are coarsely chopped and combined with Fukuoka soy sauce and aromatic sesame oil. The result is a dressing with a rich umami depth and subtle smokiness, balanced by tangy and roasted spring onion notes.
 
  • Salads & Poke Bowls: drizzle over mixed greens, avocado, or seaweed salads with shrimp, mussels or cockles.
  • Seafood: ideal for prawns, mussels, cockles or scallop salads, giving them a rich, smoky twist with a balance of sweetness and tanginess.
  • Tataki & Carpaccio: perfect with beef or salmon tataki, scallop carpaccio and sashimi to add depth of flavour.
  • Noodles & Rice: toss with cold noodles or add to warm rice bowls for a boost of umami flavour.
  • Marinade: use as a marinade or dipping sauce for grilled meat or vegetables to bring out the natural sweetness.

Shake well before use.

Store in a cool, dark place and refrigerate once opened.
