Double Fermented Rustic Miso Paste 100g
Twice fermented, premium quality miso for soup, marinades and sauces. The unique double fermentation process delivers a light flavour with a deep soy fragrance of traditional character that ensures this miso paste is considered amongst the best in Japan.
Shiro White Miso Paste 100g
Classic white (shiro) miso, has a light miso flavour and low salt content with a natural sweetness created during fermentation. Classically used with dashi stock to create miso soup, shiro miso is also a very effective marinade for meat and fish. Just a small amount used as a glaze on meat, fish and vegetables is a very effective flavour enhancer. White miso is also used in sweet dishes where it combines very well with dairy products, adding depth and character. Other uses include dips, and salad and vegetable dressings.
Aka Dashi Red Miso Paste 100g
Aka dashi red miso is characterized by its rich umami flavour and deep red colour, which comes from a longer fermentation time compared to lighter miso varieties. Aka dashi red miso contains fermented soybeans, salt, and koji culture as well as barley and rice miso for added depth of flavour. Aka dashi red miso has a bold, savoury flavour with a pronounced umami taste. It can range from mildly salty to quite salty, depending on the specific brand and production methods.
