Unlike regular short-grain rice, milky queen has a lower amylose content, which means it retains more moisture, making it softer, silkier and slightly more elastic when cooked. This quality gives it a smooth, delicate mouthfeel while maintaining just the right level of stickiness—ideal for sushi, rice bowls, onigiri and everyday dishes.

How to Cook Milky Queen Rice – A Simple Guide

Milky Queen rice is a highly prized variety, known for its natural sweetness, soft texture, and sticky consistency.

To enjoy its full flavour and aroma, proper washing and cooking techniques are essential.

Follow these steps to master the perfect rice:

1. Washing the Rice – The Key to Purity

Rice absorbs water quickly, so the first rinse is crucial. Follow these steps for the best results:

  • Use clean, high-quality water for washing, as the rice will absorb the first rinse.
  • Quickly rinse the rice once, then immediately discard the first water to remove any unwanted flavours or impurities.
  • Add plenty of fresh water and gently wash the rice by stirring 5–6 times. Repeat this process a few times, draining the water each time, until it runs clear.
  • This careful washing method preserves the natural aroma and clean taste of the rice.

2. Water Ratio & Soaking Time

Since Milky Queen rice is naturally sticky, it requires less water than regular rice to achieve the perfect texture:

  • Recommended ratio: 150g of rice to 180–190g of water (maximum).

Soaking time:

  • Summer: Soak for 30 minutes before cooking. For a better result, use cool or refrigerated water.
  • Winter: Soak for about 1 hour for the best texture.

3. Cooking & Finishing Touches

  • Cook the rice as you would with regular short-grain rice, using a rice cooker or stovetop method.
  • Once cooked, immediately fluff the rice with a rice spoon, mixing from the bottom to prevent clumping and to keep the grains intact.
