This premium Japanese Karashi Mustard Powder is made by the skilled artisans at Yamasei in Kagawa Prefecture. Also known as "Oni Karashi" or "Demon Mustard," this spice blend is a powerhouse, combining the perfect balance of spice and flavour. Made from Barukan (Volcano) mustard seeds, it has become an essential ingredient in many Japanese sauces, condiments, and marinades.
Karashi, or wa-garashi (Japanese mustard), is renowned for its heat, slight bitterness, and peppery notes. Derived from the seeds of Brassica juncea, a plant used not only for its seeds but also as a versatile vegetable in Japan, this mustard powder is also enriched with 1% turmeric powder to enhance the colour.
To create the perfect mustard paste, simply mix the Karashi mustard powder with lukewarm water (preferably between 40°C and 60°C). Avoid higher temperatures as this may affect the taste. Gently stir in one direction and let the resulting paste rest for 10 to 15 minutes to allow it to develop the fullest flavour.
Karashi pairs perfectly with soy sauce, Japanese ketchup and tonkatsu dishes (breaded fried pork cutlets), dumplings, oden (simmered fish cakes), and natto (sticky fermented soy beans), and can be used as part of a dipping sauce when mixed with mayonnaise, called karashi mayonnaise or with vinegar and miso, called karashi su miso, a dressing/sauce that tastes great alongside vegetables, seafood, and rich meats like duck. It can also be added to dressings, sauces, and marinades, or used to make pickles.
