Meyer Lemon Vinegar - 70ml

Meyer lemons are sweeter and milder with a floral quality, when compared to normal lemons. They also have a slight tang of mandarin or orange, and their lower acidity and mildness makes them perfect for when a less acidic citrus flavour is required.

Yuzu Vinegar - 70ml

Made with whole unpeeled yuzu juice (from both the highly aromatic zest as well as the fruit), with no added flavourings, this vinegar has a gentle aroma and is a perfect balance of bright, citrusy acidity with a hint of floral sweetness. Yuzu has a complex flavour that combines elements of lemon, lime and grapefruit, with a fragrant, floral quality.

Ume Vinegar - 70ml

A unique vinegar made by soaking and aging green ume plums from Mie Prefecture in a blend of vinegars and raw sugar which captures the fruit’s signature tartness and depth of flavour. Ume plum vinegar’s unique balance of acidity and subtle fruitiness allows it to elevate both traditional and contemporary dishes, adding complexity and depth to your cooking. This is different to traditional umezu vinegar which is a byproduct of the umeboshi (pickled ume plum) process.

About Mikura Vinegary

Made in the Mikura Vinegary, a small company of artisanal vinegar makers in the Mie Prefecture, combining natural fermentation techniques with high-quality ingredients.

The rich aroma and depth of flavour of the Mikura vinegars are due to the long fermentation time in traditional wooden barrels. This method of brewing requires time and effort for a relatively small production quantity but the end result is a vinegar which has less acidic irritation and a mellow taste compared to vinegar brewed using faster modern methods.

Each bottle is a celebration of Japanese craftsmanship and attention to detail, offering not only incredible taste but also health benefits thanks to its natural fermentation process.
