Fresh Wasabi Preparation
After lovingly growing the fresh wasabi and caring for it over 18 months, we harvest and clean it up ready to send out to our customers. How to prepare fresh wasabi to eat is important, the process of grating it into a fine paste does more than just make it easy to spread, it creates the firey taste that excites the sinuses and brings rapture to the taste buds.

As Jon says, the careful circular grating using the wasabi grater, combines two compounds that are present in the cell wall of the stem which then react to give the heat and pungency.
There's no flavour quite like it and the difference between fake wasabi and real wasabi has to be experienced to be believed!
