Pure rice vinegar crafted according to a centuries old method passed down from generation to generation in the Kumano Mountain region, the method is strictly adhered to ensuring the authentic, rustic flavour of ancient Japanese vinegar is maintained. The addition of mirin gives the vinegar a natural and mild sweetness. Ideally suited for use as a seasoning for sushi rice, it is also very well suited for vinaigrettes and seasoning roast or steamed vegetables.
Sushi rice vinegars are usually flavoured with a high quantity of sugar or fructose syrup, this often means they are over sweet and unhealthy when used liberally to season sushi rice. Mirin provides a naturally sweet alternative with flavour enhancing properties, this and the traditional flavour of the vinegar create a product with ancient roots, perfectly suited to modern tastes.
