Matcha Pancakes with Yuzu Syrup

Start your year with a vibrant breakfast! These fluffy Japanese-style pancakes are infused with matcha and served with a tangy yuzu syrup for a refreshing twist. Perfect with a cup of sencha tea.

Ingredients

For the Pancakes:

  • 150g plain flour
  • 1 tbsp good quality matcha tea powder
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 2 tbsp caster sugar
  • 200ml buttermilk (or milk + 1 tbsp lemon juice)
  • 1 large egg
  • 2 tbsp unsalted butter, melted (plus extra for cooking)

For the Yuzu Syrup:

  • 100ml yuzu juice
  • 100g granulated sugar
  • 50ml water

Optional Toppings:

  • Fresh berries (strawberries, blueberries)
  • Whipped cream or Greek yogurt
