Yuzu Mustard Salad Dressing - by Sara Hart
Fantastic with chicken, Avocado, Seafood, Fresh Leaves and Potato Salads
Ingredients:
30ml agave (optional)
1 tbsp whole grain mustard
1 tbsp lemon juice (optional)
1 tbsp yuzu mustard
1 tbsp yuzu jam
1 tbsp olive oil
1 tbsp black rice vinegar
Method:
Whisk ingredients together!
Roast chicken breast in yuzu mustard dressing for 25-30 minutes and serve with salad elements how you like it.
Pair it with Yuzu Sake!
Really Easy Sashimi Champonzu Dressing - By Sara Hart
Try with Sashimi, Seafood, Fruity Salads or Soft Goats Cheese
Ingredients:
2 Tbsp Lime/Lemon Juice
1/2 Tbsp Gold Sesame Oil
Lemon/Lime Zest
Whisk ingredients together!
Spicy Herb Salad Dressing - By Sara Hart
Fantastic with these Short Ribs and with BBQ and Pulled Meats
For the salad dressing:
Coriander Leaves
Mint Leaves
Chilli (Your Choice - Sara uses Birds eye)
1 Shallot ' finely sliced
Juice of one lime
1 tbs Agave
1/2 Tbsp Soy Sauce
1/2 Tbsp White Sesame Paste
Dash of Fish Sauce
Combine and mix ingredients well
For the Short Ribs:
Piece of Ginger
Coriander Stalks
Garlic to taste
1 Red Onion Finely Chopped
Blitz ingredients, seer beef ribs in iron pot and brown on all sides, sauté the blitzed ingredients and add:
1 tbsp soy sauce
2 tbsp Oyster Sauce
500ml Beef Stock
Put on lid and place in oven at 100c for 3'4 hours.
Plate up and enjoy with soft tortilla or rice
Akemi Yokoyama's Prawn, Watercress and Avocado Salad with Wasabi Mayonnaise and Yuzu juice
Ingredients:
200g Cooked king prawn
140g Watercress
1 Avocado
3tbsp Wasabi mayonnaise
3tsp Yuzu juice
½ tsp 3-year-old soy sauce
1tsp White sesame seeds
Method:
Make salad dressing by mixing Wasabi Mayonnaise, Yuzu Juice and 2-Year-Old Soy Sauce.
Cut the ingredients
Watercress – wash and dry in a sieve. Cut into bite size of 5cm length.
Avocado – Peel the skin, cut into bite size chunks.
Add watercress, avocado and prawns in a large bowl, pour the dressing over, mix lightly.
Sprinkle Golden Sesame Seeds to serve.
