Brown sugar pieces made by mixing raw, unrefined sugar with molasses and very slightly refined brown sugar. This mix combines a mild sweetness with salty, bitter and acidic flavours of liquorice and molasses.
Use : Excellent for rich, complex sweetness in desserts particularly with chocolate and red berries this sugar can also be added to meat and vegetable marinades. It is particularly good with pork ribs and combines spectacularly well in a glaze with soy sauce. Hard to resist straight from the pack, it is often served this way with coffee and tea.
