Wasabi rhizomes must be very finely grated so individual cell walls are ruptured, this allows compounds held in different cells to mix and react. The finer you grate wasabi, the more more pungency and flavour will be produced.
"Wasabi" grating surface
The characters of the word "wasabi" are etched all over the surface of this stainless-steel grater. The spaces between the lines of the characters "wa", "sa" and "bi" all form round shapes that feature openings in different directions. When a rhizome is grated on this surface in a circular motion, oxygen is drawn in to the paste fuelling an enzyme reaction that creates a creamy texture with optimal heat and flavour.
This grater is extremely versatile and can also be used for other ingredients such as ginger, garlic and daikon radish.
