Rice Vinegar
To craft this distinctive vinegar, Hinode blend red vinegar, derived from sake lees, with alcohol vinegar infused with cherry wood shavings. This gives the vinegar its delicate, yet distinct smoky notes, that go particularly well with oily fish varieties such as mackerel and sardines.
Enhancing flavour
It can be used to easily enhance a dish, used as a marinade for fish or meat dishes, as a glaze or to add interest to salad dressings.
